Red Beans
Preparation:
Put the beans into a pot with all the other ingredients and cover.
 
Bring to the boil and then cut the cooking with cold water.
 
Repeat this operation 3 times and then leave to cook on a low heat.
 
From time to time, stir the beans gently with a wooden spatula.
 
After a couple of hours, test to see if the beans are cooked, then take out all the vegetables and puree them.
 
Drain through a colander and add the vegetable puree to the beans.
 
Discard the hambone and take out the chorizos and the streaky pork.
 
Correct the seasoning and the dish is ready.

1 kg beans
1 leek
1 carrot
1 green pimento
1 clove of garlic
1 bay leaf
1 quarter kilo of fresh streaky pork
2 chorizos
1 hambone
1 dried red pimento (chorizo-type)
1 onion
1 tomato
sal
oil
