Peas purée with lima mayonnaise and mint oil


For two bowls

The purée

100 gr – green split pea

300 gr – mineral water

100 gr – vegetal drink

20 gr – olive oil


20 gr – Soybean drink

45 gr –  Sunseed oil

10 gr – lima juice

Salt and pepper

Mint oil

50 gr – mild olive oil

5 gr – mint leaves



The Purée

Cook the peas until tender.

Discard water and process with the vegetable drink until smooth.  Add slowly the oloive oil, season with salt and pepper.

The mayonnaise

Emulsify like any traditional mayonnaise

Mint oil

Blend all the ingredients together and pass through a fine strainer.
