  • Process

    1. Peel the onion. Wash the leek, carrot and tomato.
    2. Put all the vegetables (whole) into the pressure cooker along with the black beans. Cover with water and cook for 45 minutes over a medium heat.
    3. Meanwhile, prepare the prawns by removing part of the shell but leaving the heads and tails on; also remove the intestinal sac. Prepare the mushrooms by removing the stalks and brushing them gently to remove any bits of earth. Once the beans have been cooked, remove the vegetables and put the beans and their stock in to a saucepan; season to taste and keep covered.
    4. Sauté the prawns and mushrooms in separate pans with a splash of olive oil and a couple of pinches of salt.
    5. Put a generous portion of beans on each plate and arrange the prawns and wild mushrooms on top. Sprinkle over a little Maldon salt and serve.
