Green Tabouleh of Bulgur with Garbanzos



  • Process

    1. Cook the bulgur wheat in the same amount of water for 5 minutes at a low heat after bringing to the boil. Leave to cool.
    2. Wash the green beans and cook them in boiling water with a teaspoon of salt until tender. When cooked refresh them at once in iced water. Drain and set aside.
    3. Clean the spring onion and cut into rounds, including some of the green part.  
    4. Chop all the herbs finely. 
    5. In a bowl mix the bulgur wheat with the chick peas, herbs, spring onion, peas and green beans. Dress with olive oil, lemon juice and salt to taste.

    • 250 g cooked garbanzos 
    • 250 g bulgur wheat
    • 180 g green beans
    • 1 spring onion
    • 100 g cooked peas 
    • 20 g chopped parsley
    • 20 g chopped mint
    • 20 g chopped basil
    • Juice of a lemon
    • Olive oil, salt and pepper
