Green Tabouleh of Bulgur with Garbanzos

Process
- Cook the bulgur wheat in the same amount of water for 5 minutes at a low heat after bringing to the boil. Leave to cool.
- Wash the green beans and cook them in boiling water with a teaspoon of salt until tender. When cooked refresh them at once in iced water. Drain and set aside.
- Clean the spring onion and cut into rounds, including some of the green part.
- Chop all the herbs finely.
- In a bowl mix the bulgur wheat with the chick peas, herbs, spring onion, peas and green beans. Dress with olive oil, lemon juice and salt to taste.

- 250 g cooked garbanzos
- 250 g bulgur wheat
- 180 g green beans
- 1 spring onion
- 100 g cooked peas
- 20 g chopped parsley
- 20 g chopped mint
- 20 g chopped basil
- Juice of a lemon
- Olive oil, salt and pepper
