Salad of chicken, red beets, red onion, red cabbage, dark red kidney beans and tomato

Process
- Break up the chicken into shreds.
- Cut the beets into very fine rounds. Peel the red onion, cut in half and slice finely lengthwise.
- Cut the red cabbage into julienne and dice the tomatoes.
- In a dish mix the chicken with the beets, onion, red cabbage, tomatoes and dark red kidney beans.
- Dress with olive oil, balsamic vinegar, and salt and pepper to taste.
- Serve.

- 2 cooked chicken breasts (boiled or roast)
- 1 large cooked red beet
- 1 red onion
- ¼ of a red cabbage
- 2 tomatoes
- 300 g cooked dark red kidney beans
- 4 tablespoons olive oil
- 1 ½ tablespoons balsamic vinegar
- Salt and pepper
