Salad of chicken, red beets, red onion, red cabbage, dark red kidney beans and tomato



  • Process

    1. Break up the chicken into shreds. 
    2. Cut the beets into very fine rounds. Peel the red onion, cut in half and slice finely lengthwise. 
    3. Cut the red cabbage into julienne and dice the tomatoes.
    4. In a dish mix the chicken with the beets, onion, red cabbage, tomatoes and dark red kidney beans. 
    5. Dress with olive oil, balsamic vinegar, and salt and pepper to taste.
    6. Serve.

    • 2 cooked chicken breasts (boiled or roast)
    • 1 large cooked red beet 
    • 1 red onion 
    • ¼ of a red cabbage
    • 2 tomatoes 
    • 300 g cooked dark red kidney beans 
    • 4 tablespoons olive oil
    • 1 ½ tablespoons balsamic vinegar 
    • Salt and pepper
