Chickpea flour and oats cookies, filled with peanut butter


150 gr. - Chickpea flour

200 gr. - Oatmeal

150 gr. - Sugar

100 gr. - Butter at room temperature

1 - Egg

1 - Tsp. - Cinnamon

1 - Tsp. - Bicarbonate or Baking soda

Pinch of salt


50 gr. - Peanut butter

100 gr. - Cream cheese


Pre-heat oven at 180º C. prepare a baking tray with parchment paper.

Sift together flour, cinnamon, bicarbonate and salt, set aside.

Whisk butter and sugar until fluffy.  Add the egg, mix well. Add the dry ingredients. Using a spatula mix well until all the ingredients are well incorporated. Add the oatmeal and mix again.

With two spoons drop tablespoons of dough onto the prepared baking sheet. Bake for about 15 minutes, until golden. Remove from the oven and let them to cool.

In a bowl mix the peanut butter and cream cheese.  When the cookies are cold spread some cream, place another cookie on top of it.  Serve.
