Coming from the high plateaux of Peru and named for its capital, Lima, this bean is extremely popular in the Americas, both in its natural state and dried. Bolivia: Chairo (soup of lima beans with quinoa); North America: Succotash (lima beans with sweetcorn).


Large and very flat with a greenish-white colour.


Buttery flavour and creamy texture.
