Decorticated Crimson Lentil
Preparation and comments
The decorticated lentil cooks very quickly and is perfect for soups. It has less fiber and tannin than the whole lentil which makes it easier to digest. This lentil is excellent for children and old people who otherwise wouldn’t eat pulses at all.
Appearance
The bright orange color can be enhanced when polished with water or oil. During the cooking process they become yellow.
Flavour
This lentil partiallly losses its vegetable flavour (mainly tannin) when split. Final result is a sweeter and neutral flavour.
