Large Lima Bean
Preparation and comments
Coming from the high plateaux of Peru and named after its capital, Lima, this bean is extremely popular in the Americas, both in its natural state and dried. Bolivia: Chairo (soup of lima beans with quinoa); North America: Succotash (lima beans with sweetcorn).
Appearance
Large and very flat with a greenish-white colour.
Flavour
Buttery flavour and creamy texture.
