Green pea & potato soup

    Sautées onions:

  • 150 g dried onion
  • 10 g smooth olive oil
  • 1 g salt
  • Potatoes:

  • 150 g of monalisa potato
  • 300 ml mineral water
  • 2 g salt
  • Green pea & potato soup:

  • 280 g of cooked green peas
  • 88 g of sautéed onions
  • 130 g of cooked potatoes
  • 5 g oil
  • 2 g salt
  • 2 g ground black pepper
  • 240 g de vegetal broth
  • 5 ml smooth olive oil
  • Serving:

  • 20 g of cooked green peas
  • 5 g of extra virgin olive oil

Method

  • For the sautéed onions:
    Peel and chop the onion. Fry with the oil and salt. Set aside to cool.
  • For the potatoes:
    Peel the potato. Boil it in salted water for 15 minutes. Set aside to cool.
  • For the soup:
    First, blend all the ingredients except the olive oil. Then, thread the oil & season .
  • Serving:
    Serve the soup in a bowl. Garnish with the cooked green peas and a drizzle of olive oil.
