Pea cream with lime mayonnaise and peppermint oil

    For the cream

  • 100 g split green peas
  • 300 ml mineral water
  • 100 ml vegetable drink
  • 20 g olive oil
  • For the mayonnaise

  • 20 g soy milk
  • 45 g sunflower oil
  • 10 g lime juice
  • salt
  • pepper
  • For peppermint oil

  • 50 g smooth olive oil
  • 5 g mint leaves
  • salt

Method

  • The cream
    Cook the peas as indicated on the cooking table. Drain and blend with vegetable drink until obtaining a smooth, silky and homogeneous texture. Add the olive oil to the thread, add salt and pepper.
  • The mayonnaise
    Emulsify like a conventional mayonnaise
  • - Peppermint oil
    Blend all the ingredients and pass through a fine sieve.
